Those early years of marriage and those first few home cooked meals are FAR behind us…. whew! However, the nickname Hubs gave me then is still stickin today! He somewhat, affectionately called me a “Chuck Wagon” cook when I used some leftover smoked sausage, throwing it into a skillet with onions, potatoes and green bell peppers and called it a meal. Let’s just say I didn’t cook like his Mother, and mostly I didn’t cook like mine, I had my own style and I still do!
Here’s the newest version of this family favorite. We took out the taters, seein we’re tryin to be carb free!
This serves 5 peeps!
Two pkgs of Oscar Meyer Selects Smoked Turkey Sausage
One Sweet Vidalia Onion
One of each color bell pepper
McCormicks Salad Supreme Seasoning;
Cut sausage, peppers, and onion into chunks
Heat a Tablespoon of coconut oil and Tablespoon of water in skillet at medium heat; add all ingredients; put the lid on and steam for 3-5 mins then stir and cook lid off for 3-5 mins, stirring so they don’t stick; just add a little more water if they start to. Cooking time varies depending on if you like your veggies slightly crisp…which I do! Happy Trails to you!
